What is your favourite dish? I am looking for inspiration as my meal plans for the past few weeks are very repetative.

I enjoy cooking but like simple recipes as I always have two toddler 'helping' me to cook.

Lentil Daals, Veggie crepes and stuffed mushrooms please. I have done Quesedilas for lunch but would like ideas of what to put in them if you have any.
Recipes like Daal are idea as they can be made in advance and warmed up at the last minute if I'm in a hurry to get to work. I guess it would freeze well too.

    Thanks

Could I have the veg pasta and the paella recipes please. I'd have to blitz the nuts for the kids portion though as they are a choking risk. I don't really use quorn/soya, I prefer veg. We have Linda Mc Sausages/sausage but thats it. I'm not keen on the meaty texture.

Fajiitas is one of the things which we have over and over again. I make refried beans using red onion/cumin/chilli/lime juice/kidney beans and have those in wraps with cheese, sour cream, red onions and peppers.

I'm not a vegetarian but love vegetables and pulses, so I've always done lots of non-meat dishes. Some favourites:

-- ratatouille served with olives and French bread
    -- gazpacho
-- potato and split pea soup (Italian)
-- Indonesian rice table dishes, including tofu satay
    -- egg curry
    -- banana curry

Have you looked at Mamta's Kitchen she's also got a forum so if you get stuck on a recipe you can just ask and she'll sort you out.
While not strictly vegetarian The World's Healthiest foods has lots of good veggie ideas and is very fruit and veg based.

Fav but can take a bit of time is risotto (especially with blue cheese) - but nice with just mushrooms too.

I love spanish omlette too - try an alternative though and do a greek style one with feta, baby toms and olives - lovely!
Of course pasta pasta pasta!!! With spinach and mushrooms, with chilli and garlic with anything!!!

With it being BBQ season I've been doing lots of stuffed peppers. For speed use cous cous instead of rice with stock cube / spices bits of veg and pine nuts / sultanas - yummy!!!

Salad and jacket potato - love fennel and orange in a salad.

Feeling hungry - think I better leave it there!

    Enjoy!

I'm not sure whose recipe this was as I had copied it to Word a while ago but I wanted to say how yummy they are:

    Bean Burgers

Heat up a tin of kidney beans for a few minutes to soften, drain and mash. Finely chop a medium onion and grate 2 carrots into a mixing bowl with the kidney beans. Add 2oz breadcrumbs, a crushed clove of garlic, 1/2 tsp cumin, 4 tbsp chopped fresh coriander, 2tbsp tomato puree, 1 small egg (can be omitted if necessary), chilli powder according to preference, salt and pepper. I like a chunkyish mix so just make it in a bowl, but if you want it smoother you can blitz the stuff in a food processor. Divide the mixture into 8 lumps and with floured hands shape into balls and flatten, then grill until golden brown. Serve in bread buns with salad and relish.
