We've recently had this a pub with Stilton sauce .
All I can say is , gnocchi where have you been all my life !
I've bought shop bought gnocchi once , but this had an amazing yummy texture
Can anyone offer any links to recipes

I think the best home made gnocchi recipes use potatoes that have been baked in the skins.
If I make gnocchi I usually mash the potatoes and use about 1 part flour to 4 part potatoes, mix it together, with a little seasoning lightly make a dough and then pull bits off, roll into snakes, snip off pillows.
These then get boiled in salty water.0 -
I agree about cooking potatoes in the oven, boiled potatoes produce mash that's a bit too watery. The recipe I tried was roughly half and half mash and flour, rolled into sausages and pieces cut off. Put on a plate in the fridge to firm up, about half an hour. Cook a few at a time in boiling salted water, they are ready when they rise to the surface. I guess there are almost as many recipes for gnocchi as for bolognaise.One life - your life - live it!0

I’d say it depends on variety of potatoes used. Early potatoes are well suited for salads and boiling as they contain more water and less starch. Maincrop varieties are better suited.
We used to make gnocci from leftover mashed potatoes, mixed with flour and egg to bond it.0 -

I buy these from the supermarket and roast them in the oven with rosemary, garlic etc - my kids love them and they're great accompaniments for main meals!
Given they see, very easy to make I *may* have go at the weekend :-)0 -

As posted above - it's 2 parts baked potato to one part flour.
On Masterchef John had the flour on the work surface and then riced 2 baked potatoes and mixed them with the flour, mix with a beaten egg to form a dough.
Roll into a long sausage shape and then cut into little "pillows". Place into boiling water and they are cooked when they come up to the surface. Take them out with a slotted spoon and then cook in a sauce.
