Eating out of the freezer and cupboards challenge - part two

Eating out of the freezer and cupboards challenge - part two 21st Oct 13 at 8:17 AM
As the previous thread here had got very long, this is a new one for a continuation of the discussion.

From the original first post of the previous thread:

OK my freezer and stock cupboards are crammed full. I realise have spent a lot of money in the food in there. I want to save money by using these and only buy:
    . Milk
    . Fruit/Veg
    . Bread
    . Yoghurt
. Breakfast cereal (only have 2 unopened packets)
. Sandwich fillings (have one pack of ham in the freezer)

as these things I eat virtually every day

Until one of the following happens
. I ran out of food
. I have only fish fingers and cornflakes left.

It will be a challenge as I'm on weight watchers so I have to be extra creative to keep my points down.

OUT: 2 of my H.M. faggots and a pack of frozen swede and potato mash.

Not food related but had one of those, too seldom, days yesterday where one job led to another and a lot got done, cleaned out my cleaning supplies under sink, threw out 3, going rusty on the bottom aerosols, small basket of yellow dusters went too, cleaned inside of windows which led to hall cupboard cleaning supplies being sorted. Hope for another good day to catch up on jobs left while too hot, I am currently listening to an audio book, and really think it occupies my brain and don`t notice the work.

Chicken breast and some peppers out and using mushrooms and asparagus so they will not be going in freezer. May have to put some cauli rice in but it will last a few days in fridge.

I, too, got out an aubergine lasagne for dinner tonight. We had it with some salad.

Not sure what we're having for dinner tomorrow so may need to get something out later

    IN - Nothing
OUT - Piece of salmon, white fish fillet, piece of smoked haddock. Will get out a handful of prawns later when I make the fish pie, find the cooked prawns don'g go rubbery when you put them into the pie frozen.

IN: Pack of beef mince split into 2x250g portions, ditto a turkey mince.y.s poulting.
OUT: Lamb chops, pack of frozen celeriac.
I have no fresh veg left, but my beans are still producing, tomatoes are slowing, cucumber gave up, except for a romano pepper and half a red cabbage, salad drawers empty, will probably stuff the pepper with cream cheese and grill for lunch, the red cabbage, I will think, I need to make inroads into frozen veg drawer.

Got some beef meatballs out but did not have any l/o tomato sauce type mix in freezer but did see a small lump of red lookin chilli some have taken that out to use as the sauce. Have put some brown curly pasta shapes in bowl of water to sit and soak, will then bung in micro when I want to have them, I know they will be soft but as I cook for one, I dont care. Will be an easy cook and uses stuff from cupboard and freezer. May get the pineapple I bought out of fridge and use the special tool I bought from Am.. to peel and slice it, planning on making some sort of rice and chicken and pineapple meal tomorrow (or similar).

Meatballs last night were lovely, remainder of the "chilli sauce" will go in a tortilla for lunch today, getting some frozen chicken chunks from freezer, frozen peppers plus some fresh stuff to make chicken and pineapple fried rice, using the cauli rice. Tomorrow will do sweet & sour meatballs from freezer with pineapple plus honey etc from cupboards and finish off the cauli rice. Then will start to menu plan using freezer foods for rest of week but not set in stone.

Making roast beef dinner tonight using a large rolled rib of beef from the freezer.

Will be making curry with some of the LOs so made up a batch of curry mix - I prefer to mix my own rather than using a standard curry powder which never seem to be quite right for flavour. My own mix is very tasty and aromatic without too much heat.

As decided for today, already prepped, but will have to do something with courgettes tomorrow and I have a few mushrooms to check out too. Will try to use up some of the "lumps" of food from freezer, probably cooked mince which I did not label and also some tubs of stuff I have labelled - making an effort.

    IN: 3packs B.B.Q. Pork
    OUT: Lamg and gravy
Had chicken thighs yesterday which I consider the dogs, neighbour gave me remains of a leg of lamb, she won`t eat it cold, so I have a pack of my lamb and gravy in freezer, will fetch that out, add to it and depending on how much left will freeze for curry.

Made a beef curry yesterday for tonight's dinner. Hoping there might be a couple of portions left over to freezer but not holding my breath!

    Nothing out.

IN: Will be putting the donated lamb leg cut up for curry in, when I defrosted the lamb and gravy there was enough for 2 meals, which is why I froze it in the first place.
