Haven't flown much before but in my internet surfing I came across someone saying they got charged by Ryanair because they weren't there two hours before their flight
On the Ryanair website it says the desk to check in luggage closes 40 mins before flight and boarding gate closes 20 mins before.
Obviously, like any sensible person I am planning to get there a lot earlier than this but maybe not quite two hours early.
Would be good to know. Can anyone tell me please? (thank you)

They do not charge you for not being there 2 hours before the flight.
As you said you need to leave enough time to queue to drop your bags off, then get through security and get to your gate.0 -
Thanks v much!0
