  • Have updated my signature to include a Mr S delivery that came Saturday, they had sent me a £10 off voucher on a £50 shop so stocked up on toilet rolls and cleaning bits plus topped up a few everyday bits such as milk/bread/cereal. Going to try and make a list of our freezer contents later and meal plan around them, food seems to get lost in them and we are now starting to take over the dog's freezer as well :o I would love to get down to one freezer if possible as I think it would be much easier to know what we have and keep our shops down.

    Miserable day outside and we have a plasterer in so might take dd up on her offer to treat me to a Costa today :T I'm sure dh will manage for an hour on his own.

    Yesterday was NSD but will need a few bits for DS packed lunches today, so I will update signature later.

    I need to join the injury bench now. Felt rubbish all year, thought I was just being a bit pathetic. Turns out Ive got pleurisy. Should start to feel better soon.

    Doom & Gloom I'm so sorry to hear about the way you were treated on the bus, that's terrible! What an ignorant woman; I hope she doesn't pass that on to her child :(

    I made up a delicious dinner last night and it gave me 4 massive portions to have with veg - totally free on Slimming World too (also vegan of course)! Here's the recipe if any of you want it - it;s nothing ground breaking and I totally improvised it but it was really delicious!

    Aubergine, Lentil and Potato Layer Bake

    7 small - medium potatoes, peeled and sliced into 1/2 cm slices
    2 large aubergines, sliced longways
    250g dry green lentils
    1 large white onion
    2 giant garlic cloves (this would probably be 4 normal sized but I get the big garlics!)
    2 tsp dried basil
    2 tsp dried oregano
    2 tsp smoked paprika
    1 tsp sea salt
    1/4 tsp black pepper
    1/4 tsp chilli flakes
    2 bay leaves
    2 tins chopped tomatoes
    3 heaped tbsps tomato puree


    1. Bake the aubergine slices until soft and lightly coloured (I just used a few sprays of Frylight)
    2. Parboil the potato slices for about 10 minutes
    3. Cook the lentils as per packet instructions - I just put them in loads of water and get them boiling then simmering for about 30-40 minutes - I don't really time it, just eat a couple now and then - LOL
    4. When the lentils are done, make the sauce - saute the chopped onion and garlic in water (or oil if you're not trying to lose weight!) until translucent, add all the herbs and spices, mix well and cook for further minute, the add the cooked lentils, the tinned tomatoes and the tomato puree. Let it sit on a low simmer for 20-25 minutes to get those flavours combined.
    5. To assemble, its 3 layers of sauce, 3 of potato and 2 of aubergine, in this order: sauce, aubergine, potato, sauce, aubergine, potato, sauce, potato.
    6. Sprinkle with salt and pepper and bake for 20 minutes foil covered, then 25 uncovered.

    It's really good.. You could top with (vegan!) cheese before baking if not on a diet like me ;)

    £22.35 in the "social budget" and £14.32 in the groceries budget, £37.67 left for the next fortnight. Still lots of basics in the fridge, store cupboard and freshly defrosted freezer :D

    For anyone interested, Lidl are have a Vegan/Veggie specials on Thursday 15th. Gonna hold off shopping 'till then, weather rubbish here and I have a ton to be catching up on.

    elsiepac Thank you for the recipe. It looks lovely. I sometimes struggle to picture what something would look like if I’ve never had it before. The photos really helped. I’ve already screenshot it to try out next week!

    Thanks for Lidl tip - what sort of stuff is included? Don't have one near me so would need to bribe my mum to go to hers for me lol!

    I'm okay now yes. Though I didn't go out today with my OH as it was still in my mind :o. I will also admit to having a few drinks last night due to it as did OH. Bad habit I know :(.

    Thank you. I am ashamed to say I did mention her being a parent when it happened :o, however it was after I said that that she said it was funny :mad:.
    By the way that recipe looks epic and as I'm not on a diet, though trying to keep to current weight, I will probably try that with some vegan cheese when I next buy some :D. I have some vegan parmesan right now that might work?

    Yes it was horrible but there you go, some people just don't know how to be considerate of others. I am glad you are better after your tumble. I didn't comment before but I was thinking of you and others.

    I can't see about the veggie/vegan event. Do you know what exactly is vegan? I know my local Lidl is usually lacking but last time my OH managed to pick me up a few items.

    Today should be a NSD unless OH goes shopping before he gets home later.
    We had pancakes today. I had buckwheat ones with apple and pear. OH had his 'usual ones' with smoked bacon he defrosted in the fridge over night.
    Just tucking into vegan sausage stew with brown rice.
    I am a vegan woman. My OH is a lovely omni guy :D
