Vegetarian slow cooker recipes please 13th Jun 19 at 2:54 PM
    Dear All

I have just been gifted a slow cooker and i would like to start using it, as at this present moment in time its cold.

I am a veggie - are there any good slow cooker veggie recipes that the lovely people on old style are willing to share?

    Thanks in advance

Loads of recipes online. Things like veggie chilli or curry for example. First port of call should probably be BBC Food website.

Definitely worth googling "slow cooker veggie recipes" or something similar and loads will come up, particularly from bloggers.

    HTH.

Would it not overcook the vegetables?

I would be careful with preparing some legumes as some of them contain toxins that break down during boiling and slow cooker doesn’t reach required temperature

SC cooks at very low temperature so veg doesn't get overcooked (although I never cook potatoes in it as don't like the texture of them when slow cooked).

If you wanted to add dried beans etc then you would need to do the vigorous boiling before adding to the SC. Alternatively you could use tinned ones.
