Boiled bacon, carrots, onions & potatoes. Will throw in some aspargus for the last few minutes. Will wizz up some of the onions with some of the stock to make a gravy to have with it.

This is something we haven't had for a very long time.

Today I'm planning to cook Chicken Parmentier from Rick Stein's Long Weekends (Bordeaux) if I get the time.
All prepped and part cooked - carrots, shallots, celery, tomatoes all done. Just need to reheat then add cooked chicken, olives and parsley.
Mash already done, need to add cream and then assemble before putting in the oven. I've decided not to add the egg yolks to the mash.

We're enjoying some down time with no school and even hubby off for the day!

BFast: Pot of coffee, porridge with walnuts and maple syrup.

Lunch/Tea: Roast organic lamb from the (most) local butcher, roast spuds, cauliflower, broccoli, carrots, gravy and mint sauce mid afternoon and about to crack out some hot cross buns with a pot of tea.

    Happy Easter/Happy Sunday. :T

    Today, I am not sure

Either spiced lamb hot pot from yesterday LO lamb
    Or all day breakfast
    Or chilli and nachos

Doesn't really matter as the others will be made this week anyway :)

Edit: went for the spiced hot pot in the end - Sabrina gayhour recipe and smells amazing, also made some sweet potato, ginger and courgette soup for work lunches

Back on the MSE wagon and onto my fave thread, it's always full of good ideas.

We're having veggie burgers with oven chips followed by more choccy Easter Egg for pudding.

Chicken & Fig was very good. Using remainder of figs to make fig tarts today. Cooked the Chicken in Milk in SC yesterday so will have today with roast Mediterranean veg & cous cous today. Have just got breasts to use now. Moving down freezer.
