Its really easy, slice some chicken breasts breadth-ways into 1cm slices, marinade overnight then grill with whatever veg you fancy. Squeeze of lemon over the top just before serving. Or it's nice in wraps with grated cheese and bbq sauce.
For the marinade I use plain yoghurt, tikka powder, chilli powder, cumin, garlic granules and salt but there are loads of marinade recipes on line.

Today brought in leftover aubergine dal, based on Jamie Oliver's recipe. I don't bother with roasting in the oven though, just chuck everything in the pressure cooker for 15 minutes and it's good to go. I love dals and split pea recipes, they're so cheap but filling (and freeze well!).Bring lunch to work March: 5/13
