    you can add them to salads or to any dishes calling for tomatoes or tomato sauce.

    i use them to sack on as i am a dieter

    or roast them with onion, garlic and herbs and make soup/pasta sauce

    I have completely lost all imagination......:confused: I also have various other ingredients like onions etc but my brain has turned to moosh and I have no idea what to make for dinner!

    I make roasted tomato soup if I've got a lot of them to use up. I can't remember the exact amounts, but this is a rough idea

    1lb tomatoes, cut in half and deseeded
    1 red, yellow or orange pepper, deseeded and cut into chunks
    few cloves garlic
    olive oil
    stock
    sm tin butter beans

    You roast the tomatoes, pepper and garlic in a hot oven with the olive oil for about 20 minutes. Tip the contents of the roasting pan into a blender with the drained butter beans and a pint or so of stock, and blend. Use more stock or water if it's too thick.

    I like this because the roasting really brings out the taste of the veg.
