    I've just made manchester tart and now I have 5 egg whites left over, so thought I'd make some meringues. I know I've got a recipe for microwave meringues somewhere but of course I can't find it at the moment! Can't be bothered to make 'proper' ones, Can anyone help?

    Microwave Meringues


    1 egg-white
    8-10 oz / 225-275g icing sugar



    Whisk egg-white until stiff. Fold in icing sugar to form a very stiff mix. Roll 1 tsp-fulls into tiny balls and place in a plastic bun tray. Cook on full power for one to one and a half minutes or until meringues do not flop when door opens.
