    I marinaded some chicken in pesto last night - that was lovely! Using your ingredients, I'd put the garlic, ginger, chilli, soy sauce and some oil together to make an oriental type marinade. If you put in 'marinade' under the recipe search field on the bbc food website loads of recipes come up - hope it help!

    Look up the ginger and chilli chicken in the Old Style Recipe collection. The sauce can be used as a marinade.

    If you still want marinade recipes Ive got a Ken Hom cook book with plenty in. Did you want them in time for Sunday tea? I can post them Monday morning if you're still interested?

    some of my favourites;

    use the juice of a lemon on some chicken cut into strips, stand for 10 mins or as long as you have, grill or griddle.

    grainy mustard with a little creme fraich ontop of salmon fillet then grill

    grateed ginger, crushed garlic and some fresh chilli and mild olive oil/ground nut oil, leave for 10 mins or as lon as you have, grill or griddle, great with chicken or fish.

    I do a salmon teriyaki by mixing 2tbsp soy sauce with 1tsp brown sugar for each salmon filet, and marinading for a few hours. The sauce goes nice and sticky when you grill/fry the salmon.

    For chicken, put lemongrass, chopped/grated ginger, crushed/chopped garlic, turmeric, ground coriander, brown sugar and bit of olive oil in bowl and mix well. the longer you leave the chicken to soak in it, the tastier it is. We pan fry this, but can also be grilled or baked in a pan lined with oil

    Mix some olive oil with salt, pepper and loads of paprika, rub into the chicken, then leave for a bit and grill or bbq. Simple but yummy....

    Hi all,

    I was wondering if anyone had any recipes for marinades that we could put on meat for the BBQ and ideas on making Kebabs for BBQ too?

    Here are a couple of my favourites:

    Plain yoghurt (greek is best, but value low fat will do) lemon juice, garlic & lots of black pepper. lovely with pork or chicken.

    Tomato ketchup, honey, soy sauce & a splash of tabasco on chicken legs.

    lime, olive oil and garlic for fish syeaks (tuna, swordfish, marlin etc). nice done on sticks with bell peppers and mushrooms
    Smile and be happy, things can usually get worse!

    classic honey and mustard - wholegrain if possible on chicken is lovely.

    greek yoghurt (tablespoon) mixed with a teaspoon full of garam masala curry paste is also yummy if you happen to have it in!

    last year we also did a home made BBQ marinade, can't remember exactly but think it involved tomato puree / pasata reduced, garlic, soy sauce, honey, white wine vinegar and basically anything else I found in the store cupboard!!

    Is there a way to make a marinade into a sauce? I've got pork chops in the fridge with a marinade of soy sauce, lemon juice, ketchup etc. on it, and just wondered what I was going to do with left over marinade that it was sitting in (plus bf likes a sauce as he doesn't like dry meat and rice).

    as its been on raw meat i would make sure that you make sure that you cooked it through - but i think it would be fine heated up - perhaps watered downa little if thick - and served on top of the cooked chops.

    Thanks for that. I thought it might be something like that. I'll heat it on the hob. It's a bit sharp just to have it as it is, but maybe a bit of water might help.

    storecupboard BBQ marinades - urgent
    Hi, has anyone got any good ideas for BBQ marinades? Won't have access to internet tomorrow only today until about 4. I'm having a BBQ tomorrow and need some quick cheap ideas.

    Off top of my head in my cupboard I have:-

    honey
    worcestershire sauce
    soy sauce
    olive oil
    truffle oil
    peanut butter
    marmalade
    various herbs and spices
    saffron
    linseed
    sea salt
    black pepper



    I'm making up skewers of pork, beef and chicken with peppers etc. But any other ideas very welcome! Please help.
