    Hi old stylers,

    I would like to try making my own salt beef, however all the receipes I have found so far call for some saltpetre ( potassium nitrate i think) for the brine. I believe the saltpetre tenderises the meat and helps it retain its colour.
    I have seen it on the web but a small amount is 8 with postage. I have tried local chemists without any luck, do any of you know where I might find some? Or whether it is really an essential part of the mixture.
