    I've lost my ice cream maker recipe leaflet - can anyone give me a recipe for vanilla ice cream using single cream only? Have searched on Google but keep coming up with double cream needed. Thanks!

    Have to admit that I make mine with single AND double cream - OMG!

    This one uses milk, but I would just substitute single cream ... HTH

    6egg yolks
    4oz sugar
    1pt 600ml single cream or 1/2pt single and 1/2pt milk
    2 tsp vanilla sugar or 12 drops vanilla extract
    Make a custard and when it thickens cool and freeze.
    Remove from freezer to fridge 1hr before serving.
    If you want the method for egg custard post back.

    In the end, I used the pot of double cream I had in mind for meringues! Made two litres using small tub (284ml) double cream, 500ml single cream and 100ml milk, 8 egg yolks, 6oz sugar and vanilla extract. Very nice it is too!
