Iphone SE 2020 storage question

am going to buy this phone to replace my  iPhone 5.  I think 64gb enough storage but am a bit confused.  I don’t play games. My needs are just emails, web searches, messages , what’s apps, a few podcasts and photos.  I take a lot of photos of the grandchildren etc and pay a small amount for iCloud storage each month.  My storage is full now on iPhone 5 but only a smallish amount is photos and the phone only has about 14gb I think!  So, my question is, with iCloud storage in place is 64gb storage plenty because the photos are not actually sitting on the phone?  For what purposes do people buy 128gb storage or higher?  My husband has iPhone XR and, like me, doesn’t play games and has cloud storage for photos.  He has used 40gb of his 128gb but has more apps downloaded.
There is a difference in price of £50 on the price if I go for higher storage.  But I don’t want to pay for what I don’t need.
many thanks

The iphone SE2 has a much better video camera giving you the opportunity to take really decent videos of your grandchildren too. These tend to be memory hogs. If your previous one was an iphone 5 then you don't upgrade that often. £50 isn't really a huge price premium, the benefit to you is that you will never have to worry about running out of storage.

£50 for 64Gb of storage, rip off price when you can buy 128Gb micro sd cards for £4

Not really comparable with MicroSD cards - the internal memory on an iPhone or an Android phone will be far faster and likely more reliable (read/write counts) than a card.

I asked sibling this question - he recommended the higher 126 storage to future proof it as on his iphone 10 (and he's not one who used a lot of storage for music etc) he's already along way towards that.

Pedant alert - it's could have, not could of.

In addition to iCloud Photos you can always use the likes of Google Photos/OneDrive as well if you do elect for a 64GB variant.
