Went on yesterday to look at flights to New York from Edinburgh. The flights were £333 yesterday. Wnet on today and they are up to £370. Should Ibook now? Will the flight prices keep going up or might they come back down again?

There is every possibility they will come back down. Flights often are more expensive at different times of the week.
However there is a real possibility it won't come back down. And long term the closer you get to your date of travel the higher the price usually gets.
If it were me and your dates were at least 3 months away i would wait until Tuesday and look at the price then. If it is still inflated then it will most likely 99% not come back down.
Hi, Martin’s asked me to post this in these circumstances: I’ve asked Board Guides to move threads if they’ll receive a better response elsewhere (please see this rule) so this post/thread has been moved to another board, where it should get more replies. The other thing to be awre of is that some software "knows" you've looked before and increases the price gthe next time you look!
Either clear the cookies for that site or use a different PC
Concider this:
Would you be more gutted if you booked now then the price went down £50 or more gutted if you didnt book then they went up £50-100?
