I've got a fan oven where I can't switch off the fan too. It's got a nasty "hot spot" too (I thought fan ovens weren't supposed to get those ). Anyway I bake my bread at 180C for 35 minutes - maybe a couple of minutes over if necessary - and it comes out perfectly. Most recipes say it should be baked at something like 230C which I've always found much too hot.
