I suppose I'm a "Mortgate Tart" as I move every couple of years. Unfortunately, we are due to move it again soon but I have changed jobs since the last time and now have no proof of income (I look after an elderly relative and she pays me by cheque each week), will I be able to move as it will be based on joint income?

Provided your joint income is sufficient to service the loan you should be OK

Remember to consider existing lender also- they may be able to offer new rate without hassle of moving and without having to prove income again
