Please HELP conflicting requirements for Holiday Nirvana?

Hi, can anyone help. My partner and I are looking to go on holiday with his two children (aged 10 & 16), we all seem to have very different requirements for the holiday. When and where to go?
Ideally want two rooms.
Must be Easter holidays or May Half term or summer holidays.
Thinking of Belek, Turkey (advised Meditteranean Coast only if Easter/May but can't find Belek in my old rough guide?) or Paphos, Cyprus. Not Turkey for the summer as probably too hot, if looking at the summertime Croatia would also be good or Greek Island or mainland. The Dad hates travelling to places where there is any extreme poverty/begging - so Tunisia and Egypt et al are out of the question.
10 year old boy: kids club/plenty to do; excellent swimmer so swimming pool and wants on the beach. Loves Karaoke. All inclusive. Very limited diet - of the pizza and chips variety.
16 year old female: Clean resort and hotel on the beach, sunny, another excellent swimmer - swimming pool. Loves Spain Sun/Sol? Princess? hotel on a beach. Hates Karaoke. All inclusive.
Dad: All inclusive (inc. International Brands ie. Fosters lager or similar) on the beach, pref. near a golf course. Under 250 rooms (?). Likes the idea of a villa/bungalow/chalet with two rooms within a Hotel with AI. Likes the look of Paloma Grida Village & Spa in Belek? Would go for a villa with a swimming pool if nearby reasonable restaurants available. Not into extreme heat. Hates expensive shops/restaurants.
Me: Used to holidaying independently and on the cheap. Don't really like AI but will suffer it and would probably enjoy resort type spa/tennis facilities etc. but don't really find this essential as my real priorities are to be in a picturesque area, near a village/smallish town - with easy access to bus/local transport to travel round the area. Into history and local culture. My preference is for small holiday villages/towns with restaurants and local food and not into big resorts. Would like somewhere it is nice to walk. Prefer some greenery and pretty scenery. Preferably warm enough to swim in the sea but bad swimmer. Not into extreme heat. Loves France esp. Provence, and Gozo. Northumberland and Pembrokeshire.
Budget up to c.2K but the cheaper the better however would consider paying more if all these requirements could be met up to prob 2.5K.
