Its exceptional fine dining Mirabelle is one of two restaurants at the hotel, and has gained an excellent reputation for its quality menus, offering a modern European menu of seasonal specialities featuring local Sussex and Kent produce, complemented by an expertly curated wine list featuring many Sussex wines.

Terms and conditions
Tasting menu is £80pp, with wine allowance of up to £35 for one bottle. Prize offered according to availability, is valid for 12 months, and excludes black-out dates: Valentine’s Day, Mother’s Day and UK bank holidays.
