Pickled Red Cabbage

I've got a large jar of pickled red cabbage.
Apart from using it as. well, a pickle is there anything else I can do with it?
I thought maybe a kind of vinaigrette coleslaw. Maybe a non-mayo based kind of potato salad? Or should I just use it as a relish with hashes etc.
I've searched red cabbage but all I get are either pickling recipes (which I obviously don't need) or the cabbage used isn't pickled.
All ideas gratefully received. TIA

I adore pickled cabbage,indeed pickled anything. Sadly I am not allowed to eat them healthwise right now. Red cabbage though is nice as straight cooked cabbage on your dinner. A bit of colour. Nice raw in salads too. That type of cabbage lasts for ages in a fridge also.1

I wonder if it is possible to soak some of it in water and make it less pickled, then turn it into a side salad with chopped apple etc

I think once its pickled theres not much you can do with it. It will always have that vinegar taste.
I think you have already suggested the best uses. Pat it dry with kitchen towel and mix in some raw carrots, raw red onion to make a salad, great for use in tacos.
Goes really well with burgers and fish.

OP - I like the potato idea. Maybe mix it with cold boiled potatoes, sweetcorn and something green to make fritters / a rosti?No man is worth crawling on this earth.

I have been eyeing this pierogi recipe by Olia Hercules and think that you could make the filling part of the recipe and then enclose it in any sort of pastry that you like e.g. ready made puff or shortcrust or even some spring roll wrappers and get quite a good result.
