Help using my boiler / hot water heating

Moved into my new house and I am stumped with how to use the buttons on my boiler correctly.
It is an intergas compact HRE 24 OV, with lpg gas tank. I am trying to adjust hot water temp, I can adjust radiator temp but I can't select the hot water at all. At the moment it is scalding hot. I am heating it from 2am-4am via the nest thermostat, although this button on the wall also heats up the radiators manually and I can't figure out why or what it actually is. Or how I should be using anything. My previous house had a bosch combi boiler but there was no setting it on a timer on a thermostat so I am soo confused and going round in circles. I'm basically unsure if what I'm doing is seriously energy intensive and overkill or is there a really simple way of using the system.
There is also these pipes in a cupboard (different room to the boiler) which I'm not sure if they are of significance.

Hi jt.
Could you post a photo of your hot water cylinder, please, making sure you capture all the important bits - valves and stuff?
In essence, your max hot water temp should ultimately be set by a thermostat clamped to the side of your cylinder, and not by the actual boiler.0 -

That white box in the first picture looks like a motorised valve to me.
