Best way to pay ?

We’ve a holiday booked to Greece early September, we may or may not get there, but we have to pay the balance soon, which is the best and safest way to pay, credit or debit card ?

What protection are you looking for?
Is it a package holiday or flight/ accommodation only?

Credit card payment gets you Section 75 protection.  This is the law and holds the credit card provider jointly responsible for the transaction. So the supplier (TUI) breeches the contract you have with them, or failed to deliver, you could start a S75 claim with your bank.

Do note though it only protects you if the supplier is in breech of contract or not following the law. For example if the borders are open and TUI are operating the package, but you chose not to go, then TUI would not refund you, and a section 75 claim wouldn’t help either.

Also, as the date to fly gets closer and you are having second thoughts and consider not settling the balance  - don't cancel as you'll lose out on TUI's sliding scale refund charges,
Last autumn we had two separate bookings with balance payments due and were concerned about travelling abroad in the health crisis - TUI eventually had to cancel as there was no chance the destination would allow incoming tourists.
We got a full refund to my credit card on both by holding our nerve.
