cancelled easyjet flight, now have a voucher

Hi,

We booked a flight to paris with easyjet a while ago on a credit card but, as we booked a flexi fare, we could rearrange to another country on the same dates so once France was on the 2 week list we moved the booking to belfast. We decided to call up easyjet and cancel this flight due to coronavirus and we were told we could not get a refund (except £50 for taxes) so opted to get a voucher to use for another time

I now want to get the voucher turned into a cash refund as I am concerned about the company's financial health but I have a feeling that will be pretty much impossible so this brings me to my questions:

1. can we get a refund on the voucher?
2. if not and the company goes bust, would we be covered under section 75 (think that's right) as we booked originally on a credit card? 
I am pretty certain our insurance won't cover this as it specified that any cancellations relating from covid-19 were not covered.
