Unable to pair Apple Watch to new iPhone SE

Hi all. I've searched but can't seem to find any relevant threads.
Trying to pair my daughters Series 1 Apple Watch with a new iPhone SE (Phone software is up to date 13.6)
Every time I try to pair I get instructed on the phone to update the Watch software. This then sets the phone searching with no result. Then it says that I need to update iPhone software to latest version which of course it is.... going around in circles. If I try to cancel that it wants to unpair and reset the Watch but that just takes me back to the beginning.
Is it because it's a Series 1? This all arose because it wouldn't show the correct time.
I've been trying to persuade her to get a new watch but it's not been an issue until now ;-)
