To voucher or gamble

We have a trip planned for Greek Islands starting 30/5. Although flights won’t be cancelled until 7 days before, Easy Jet have offered a voucher valid 12 months and the first accommodation has contacted us through booking.com and offered a voucher for 24 months, the next two accommodations are Airbnb we can cancel and loose a few quid as we’ve only paid 50%
We don’t want to travel at this current time and are happy to postpone a trip that has been 22 years in the planning until next year, we are also happy to accept the vouchers if that keeps these businesses supported our only concerns are;
we just have to book with Easy Jet not travel within the 12 months; can anyone confirm this?
If we accept the vouchers and either the hotel or Airline goes bust before we travel can we claim on travel insurance or credit card (75)?
Or do we just gamble and wait on the FCO advice but as it’s 30/5-20/6 we are concerned that EasyJet will expect us to travel.

easyJet voucher is an RCN and fully abta backed read

You can claim cash back for the vouchers.
Credit card companies and travel insurance will not entertain claims if you have a voucher as it's fully backed and can be changed for cash.

No, it won't be a RCN as suggested above, this is not a package holiday and ABTA is not involved at all. This is a flight only booking, so the voucher is issued and of value only with Easyjet and if you had pressured them they would have refunded in full but that is too late now. If you keep all the documentation linking the original booking and payment by card together with the evidence of the replacement by the voucher you should be protected by section 75 of the CAA. Of the airlines likely to fail, Easyjet are well down the list so I wouldn't worry3

Thanks for replies, @Alan_Bowen and @Life_Goes_On we suspected as much. As these are all independent bookings the ABTA thing threw a curve ball and caused endless ABTA internet searches.
As the trip doesn’t start until 30/5 we are concerned that Easy Jet will start flying (similar to Wizz Air) and we don’t want to go right now, as we have three very elderly parents who are reliant on us for shopping, medication etc.
We are happy to postpone until 2021, as this Greek island hopping planning has been a dream for 22 years, (When we unexpectedly fell pregnant lol) . We hadn’t booked all accommodation or ferries and so long as the vouchers (or the credit card security if they go bust) cover for the £800 spent so far we are happy to wait.
