Travel insurance and flight cancellation advice

Hi all

Hoping for some advice please on where to begin with a travel insurance claim.

Over the weekend I had two flights cancelled which resulted in me having to stay abroad for an additional two nights.
I booked a hotel as advised by EasyJet at the airport however the only available room I could find at 3am which could also accommodate a cot and an extra bed for a child is significantly more expensive than EasyJet suggest they will cover on their website.
Aware of this I discussed with the EasyJet agent at the airport who authorised the amount in writing and stamped with his airport ID.
I’m very aware I will have a battle on my hands with EasyJet to get this paid however this is not the reason for my post.

To claim back the accommodation costs and additional expenses incurred for travel and refreshments I have the below options at my disposal;

- Invoice EasyJet
- Sainsbury’s Travel Insurance
- American Express Travel protection (£200 per person)

I had planned to claim back as follows:

- Accommodation EasyJet
- any amount for accommodation unpaid by EasyJet to Sainsbury’s travel insurance (as advised by them)
- refreshments and transport to AMEX

Does anyone envisage any difficulties with this approach or recommend an alternative?

There’s quite a few options for me so want to ensure I take the right approach
