I think I've solved the third clue.
{The baker took his dozen ponies towards the sunset. In the morning he took a pace towards the sun. He kept one pony and swapped each of the rest for a carpet before turning left.}
Pony=25 and carpet=3 are Cockney slangs.
The baker took his dozen ponies towards the sunset
1. Baker's dozen=13, pony=25, sunset=west (13*25 = 325 paces west)
In the morning he took a pace towards the sun.
2. Sun rises in the East = 1 East
He kept one pony and swapped each of the rest for a carpet before turning left.
(I assumed he started with 13)
3. 13-1=12, carpet=3, turning left when facing East = North (12*3 = 36 paces North)

I have an answer for the first clue, not sure if it's right but...
"To avoid proposals of marriage from three women he thought on his feet. Winifred wore a long fur. Liz the bigamist was married to 2 Rods. Norah proposed holding him down with 4 chains attached to 2 poles."
I think that the three women refer to three compass points.
Winifred (West) wore a long fur (furlong)
According to Wiki a Furlong is 660 feet.
Liz (Elizabeth = East) was married to 2 Rods.
Wiki says a Rod = 16.5 feet so 2 x 16.5 = 33
Nora (North) proposed holding him down with 4 chains attached to 2 poles.
A chain is 4 rods and a pole is the same as a rod.
So (4 x 4 x 16.5) + ( 2 x 16.5)
= (4 x 66) + 33
= 264 + 33
= 297
So for clue 1:
N= 297
S= 0
E= 33
W= 660
Is this likely?
Haven't got very far on clue 2 except that a cowboy hat is a ten gallon hat and a gill is a liquid unit of measure.Recent wins:

Wenchbabe - totally agree. I remember learning a rod, pole or perch were all the same length! That shows my age. A gill is 5 fluid ozs ie 1/4 of a pint,and could flounce be fluid ounce? If so what if we have to calculate everything into fluid ounces to get the paces? cup = 8 fl ounces
wearing = west?
sipping = south?"Every day when I wake up I thank the Lord I'm Welsh" Cerys Matthews0 -

I think it's Fluid ounce as well.
eat=east?
Do anyone think the word HALF is significant ?
I'm thinking : half (10 gallons) = 5 gallons = 5*128 = 640 ?0 -
Some translations of the units - using Wikipedia: Hope this helps.
The first Cryptic:- To avoid proposals of marriage from three women he thought on his feet. Winifred wore a long fur. Liz the bigamist was married to 2 Rods. Norah proposed holding him down with 4 chains attached to 2 poles.
GUESS:
N = 264
S = 0
E = 33
W = 660
2 rods = 33 FEET (if his thinking on his feet is a clue to the units)
The rod is a unit of length, equal to 5.5 yards, 11 cubits, 5.0292 metres, 16.5 feet, or 1<big>⁄</big>320 of a statute mile. [Wikipedia]
4 chains = 264 feet
A chain is a unit of length; it measures 66 feet, which equates to 20.1168 metres). [Wikipedia]
2 poles = 11 yards = 33 feet
<table class="wikitable"><tbody><tr><td align="center">pole</td> <td align="right">5 <s style="display: none;">+</s>1<big>⁄</big>2</td> <td align="left">~5.029 m</td> <td align="right">The pole is also called rod or perch.</td></tr></tbody></table>5.5 yards
