Selection of fixed rates here https://moneyfacts.co.uk/savings/fixed-rate-bonds/ - not a massive difference between 1, 2, and 3 year (IMHO).
If you want to ISA it, Yorkshire & Clydesdale Banks have a 3 year at 2%.0 -

Fixed rate bond?
Al Rayan Bank - 1 year fix - 2.02% FSCS covered, wouldn't fix for longer - rates may increase.

So, would make sense to just have the interest paid on maturity when the term expires.0
