Help Desperately Needed - Court Fine & Unreceived Mail

We are stuck in a rather nasty situation
so any help from bloggers here will be DEEPLY appreciated.
We received a speeding ticket for driving 35 mph on a 30 mph road and were required to complete and return a Driver Information Form. We did so and send the form back by a 2nd class mail - we also required a postage receipt at the time of posting. Two months later, we received a court hearing which claimed that we failed to 'provide the information of Driver on the Form to the Police'.
As we were not in country during the time of court hearing, we sent back the sommon together with the postage receipt and flight ticket advising we DID send back the Information Form back to the Police (probably the mail was lost by Royal Mail, as usual) and we were not able to attend the court hearing due to overseas travels.
Today we received a letter informing the decision made at the court. We are fined for £150 instead of £60 which usually does.
Can anyone please kindly advise us what we can do? We are really desperate.... Can we appeal? Surely we did respond to the Police in the first place but, because of the Royal Mail, the mail did not reach the police, and the case went into court hearing stage. This was not our fault...

Pepipoo is your best option for advice, but out of interest what did they find you guilty of speeding or failing to furnish? Makes a big difference with the points.
It may be worth checking your licence has not been suspended too!0
