Mortgage application process - Natwest

I posted last week. We applied for a mortgage through Natwest (its the only Bank the accepted my PhD bursary as an income so its our only chance!!). We applied over the phone on Wednesday, and we send them our ids and payslips etc on Thursday. We called today just to make sure that they have received all the paperwork and were told that the underwriter will look through them by tomorrow evening so we should have an update then.
I was under the impression that the underwriter comes in last? Can someone please briefly explain to me what the process is abd what kind of update we should expect? I've read about a few people who receive an offer pending on valuation which would be the ideal scenario

WE had an underwriter at the AIP stage. It just means it needs a human eye to look over the application.0

I see but then if this goes well then we can be positive that pending the valuation we'll get it right?0
