You are correct that in order to have seller protection you must post within 7 days of payment, but that doesn't help in this case unless you can prove with tracking that item is delivered before paypal close any claim on you. If buyer opens a case tomorrow then they you would have 10 days to prove delivery.
Obviously if you are a business ,and you seem to mention a plural for this item, then buyer can still return it for any reason anyway.
Unfortunately ebay has really moved away from the casual 'I ship when I can' seller and is a much sleeker model with buyers expecting a similar sort of service from all their sellers. Business selling is geared towards having bought or acquired an item to sell on, or made it yourself, rather than any particular volume of sales. All of which matters very little if the buyer does not get their item at all, as they are protected by eBay.
Selling is a much bigger commitment than it seems - so you need to sort this out in a way that is fair on them. As my money goes into my bank on a Monday I prefer to post then. This means I have all my listings finishing on a Saturday or Sunday. Buyers do not need to know that I only post on a Monday. Although, to be fair, this only works if they pay promptly.;)I HAVE NOTHING TO SAY;)0

In practice it is good to make sure you are flexible, particularly because buyers get up to four days before you can open an NPB and then an extra four days on top of that before you can legitimately refuse their custom. Some of my buyers don't pay for three days, and someone on Amazon can buy at any time, so I make sure if I'm not able to post promptly whenever someone might pay then I don't list anything or put listings on hold.
It really cannot be stressed enough that buyers these days are used to prompt service because of the professionalism of most big sellers and a number of good small/private sellers. Simply saying 'don't like it don't buy' or expecting them to mark you based on your projected dispatch time is counter-productive because then you just make people click back and go somewhere else.
