Hi Gem,
I don't know the answer because as a family we consume so much milk that we automatically buy it fresh but I did a quick google for you and found these links that may help.

I would have thought that because UHT is heated to a higher temp than during pasteurisation that more of the Vit C and the Bs might be destroyed during the process. I have no facts at hand to back that up, however. I daresay, because we normally use milk in quantity and most of us enjoy a varied diet, that we're not really in any danger of being malnourished because of this process.
For myself, I'd use UHT in a pinch for cooking when I had no fresh milk to hand but not in anything cold or in tea. It tastes too much like that boiled sterilised stuff to my taste and I really don't care for it. I expect it's useful for peeps who don't have easy access to the good fresh stuff or a fridge.0 -
We use UHT milk in our tea. I've grown up with it and can't taste the difference. Although I think I can taste the difference when on cereal, but that's only recently0
