Help the vegetarian at the butchers!

I'm veggie, DH and both kids are not, so I dread shopping for meat. Today I'm off to the butchers to buy their meat for the month. I have to buy the following: 1 piece rump steak (DH's payday treat!) and 3 free range chicken breasts (chicken parmesan), bacon and ham (sandwiches). Would like to keep the rest as good value as possible!

Am considering the following:
Sausages (for casserole)
1 chicken (free range - to make a curry, chicken noodle soup and sandwiches)
beef brisket or possibly shin for a stew

Other than that am at a loss. I need at least 8 meals for 4 (DH takes leftovers for packed lunch) and I have £30 to spend. They don't like liver but other than that DH is happy as long as it used to have a face. Can it be done?

    Im the same, DH is a total carnivore and I'm veggie :) i always struggle to think of meat dishes, but the grocery challange recipes are helping x
    Can't think of anything smart to put here...

    I would buy a lot of mince, you can make a huge batch of bolagnaise and freeze half of it to use to lasange later in the month, then use more for mince and tatties or stovies. What about some chicken thighs or a piece of pork (not sure what cut as I dont eat pork) and you can slow cook it in BBQ sauce then use a fork to break up all the meat and have pulled chicken / pork sandwiches.
    You could use turkey mice to make a chilli for them too. Or make it with Quorn mince and you can have some too :D
    And maybe some ham for a ham and leek or mushroom quiche or bacon?

    Purplekylie22 - will look into pulled pork recipes, and quiche is a great idea for a make ahead dinner one night. We don't eat quorn though - can't stand the stuff! Too much like meat for me and not enough for DH!

    I'm just wondering what the best value meats are now. My mam used to be a butcher many years ago, and the last time I went to the butchers I took her advice on buying cheaper cuts of meat. It cost me a fortune and she couldn't believe how times have changed!

    diced pork shoulder - sloww cook with kidney beans, onions, chilli & black treacle for a cowby inspired stew.

    The best value cuts of meat tend to be the ones that need long slow cooking. Oxtail, shin of beef and beef skirt are all good value cuts. I bought 6 pieces of Oxtail last week and got 3 meals out of it. I turn it into either a stew or a curry depending on my mood. Currently cooking beef skirt in the slow cooker with a couple of peppers, a couple of onions, tin of chopped toms and a tsp of cumin, coriander and chilli powder. My £2.11 piece of meat should do 4 meals.

    Best one recently was a beef skirt chilli which did 6 meals and cost £2. :)

    I can post some of my recipes up if you like?
