Crunchy spuds in stew...

I'm due to start in the ASSISI next week so I made a big batch of stovies today,however despite being in the oven for nearly 2 hours,the spuds are still quite crunchy...What am I doing wrong?...

    They just need to cook for a while longer. Is there enough liquid in there? If you want to quicken up the process you could fish them out and cut them slightly smaller.

    Thanks,I made sure the was a lot of liquid & cut them into 1cm dice...I'm going to take them out when it's cool & steam the spuds a bit to soften them before adding them back in.

    As PW rightly says,ASSISI is an animal shelter where I got Daisy from,if you saw the "Undercover Boss" episode about the Blue Cross,the animals that came from Northern Ireland,(not Ireland as said in the programme,) came from the ASSISI.They operate a 'No Kill' policy.

    I'm on ESA since last July,dodgy ticker,so this is an 8 week work placement,I'll get an extra £15 a week on my ESA but I'll be sticking with it after the 8 weeks have finished.
