What to serve with Smoked Mackeral Fishcakes?

OK - I've got some smoked mackeral out for tea tonight.

My mealplan says Smoked Mackeral, German Potatoes and veg.

But I am not feeling it! I have decided to make smoked mackeral fishcakes instead.

I would normally serve it with a salad but I haven't got any!

Any ideas what I can serve it with instead?

    I guess you could have rice with carrots and peas, hardboiled egg.

    I was thinking about beetroot (i lurve it) and that idea may be worth nipping to the local farm shop for! It is also loads cheaper than salad so may 'pinch' some coins out of the change pot and kid myself its a no spend day!;)

  • Keep thinking its going to be very 'carby' with rice or more potatoes as there willbe mash in the fishcakes -Umm I will have a think
  • I do a crushed creamy pea-y thing with my fishcakes. Take some frozen peas that you've steamed/boiled for a couple of minutes, then bung them in a food processor with a roughly chopped shallot (or half of a small onion), a couple of tablespoons of cream cheese, a pinch of salt & peper (and a squeeze of lemon juice if you've got it). Blitz until everything is combined but not completely broken down.
    In a better financial position than ever before (thank you MSE!). Moved back to Scotland and now trying to keep debt-free!

    tomato sauce, apple sauce, gooseberry sauce

    green veg (eg calabrese, boccoli, beans) lightly cooked then dressed with vinagrette while still warm. Serve room temperature.

    I do Hugh's (put this up somewhere else this morning!).

    Roast beetroot in wedges under foil lid with garlic cloves and rosemary sprigs and olive oil (all to taste).

    40 minutes - 1 hour take off foil, add balsamic vinegar (splash it about on them a bit, don't pickle them)

    Put back for half an hour/40 minutes to caramelise.

    Serve.

    It'd be chips and mushy peas or beans in my house but I know what you mean about being rather carb heavy. It doesn't bother me occasionally but I wouldn't have it too often or it'd get a bit much.

    My aunty used to make smoked mackeral fishcakes with peas and sweetcorn added into them which was quite nice.

    when we have mackerel fishcakes, because they have potato in them, we have them simply with baked beans.
