Hi - just had a quick squiz round google as I was interested to know myself and found these recipes on another forum. My D/H hates beetroot tho so not sure I'll be making it too often! :D

ETA: you could try asking on the Old Style board as well - that's a gold mine :)

    Beetroot, Chilli and apple chutney

    2lb raw beetroot shredded
    1lb onions chopped
1 1/2lb cooking apples, peeled cored and chopped
    1lb raisins
    3 tbsp ground ginger
    2 tsp dried chilli flakes
    2lb granulated suger
    2 pints malt vinegar
    1 1/2 oz salt
    Juice of 1 lemon

Just chuck it all in a large pan, heat slowly to disolve sugar and then bring to boil and simmer for about 2 hours until thick. It will thicken as it cools too.

Also you coud try the delicious Beetroot Chocolate cake if you have a glut my friend makes it and it is worth growing beetroot for :j

    Beetroot and chocolate cake

    30g cocoa powder
    115g plain flour
    1.5 tsp baking powder
    pinch of salt
    170g caster sugar
    240ml corn oil
    1 tsp vanilla essence
    3 whole eggs, beaten
    125g beetroot, pureed
90g plain dark choc, chopped into small pieces

Sift cocoa, flour, baking powder & salt into a bowl and mix in the sugar.
All the oil, vanilla essence, eggs, beetroot and chocolate pieces and mix well.
Prepare an 18cm cake tin with butter and pour in the mix.
Bake for 50mins at 375F/190C/Gas 5 until a skewer comes out clean.

Hi I Have just made 1 batch which was enough to fill of 3 normal jars.
    I used ........
    1 lb of cooked beetroot
    6 oz of RAW onions
    6oz of RAWcooking apples

I Blitzed all these ingredients on their own in my food proccessor and placed then in a pan.

    Then I added
225 mls of white malt vinegar
    6 ox granulated sugar
    +
1 TEASPOON of dried chilli flakes.

Bring to boil stir so all ingredients are combined
Simmer for about 30 mins to soften the onion + apples
Then bring to a steady simmer for another 30 mins stirring often.

The beetroot in the pan will become nice soft and glossy.
It will be hard to recognize the onion + apple now.
You can bottle it when it resembles gloopy jam ...
I could smell the diference as the acidicy vinegar smell vanished.

    It looks lush.

I have already blitzed another 1lb of home grown beetroot and have put it in the freezer.

    Thanks for your help
    xxxx
