Long Weekend to Jersey

Having received Martin's e-mail concerning Flightchecker flights to (amongst others) Jersey, if we went for a long weekend in November/December, does anyone know:
a) Good places to stay - not after high-priced places but really good b&B or hotel in a reasonably central place.
b) Good car hire rental place.
c) Good places to eat - not after high priced restaurants but any good quality/good food type places wanted.
d) What type of weather we may expect at that time of year.
