insurance: builders soddy work

we had a flood ( well burst pipe in bathroom), and our insurance have been great, BUT the people they employed ( we thought it would be quicker and easier) are terrible.
They dont turn up, workmanship is terrible. I phoned up the assessor and she thought the claim and work was all finished!, I said it wasnt even a 1/4 way done. Apparently they said they had done this, that and the other. They havent. I told her exactly what they have done - plastered some walls and ceilings. Electrics etc arent on the list, even though they told assessor they did them etc!.
Anyway they dont turn up, when they say they will, I have issued them an ultimatum yesterday, come on monday and complete the work to a high standard or done come back. I have informed the insurance about this.
Where do I stand? The work they have done, apart from plastering - friday when they did turn up - they never replaced all hardboard underlay - what they did fit is wrong thickness, has gaps, so when vinyl tiles ( they have brought very cheap value ones!) the gaps in the hardboard and the raise in thickness will show. Also they fitted a new double door unit, the handles are 10mm height difference - which show asthe handles are next to each other! We have other damage around the house they have caused.
I am at my wits end. We have been living in 1 room for nearly most of this year.
So what are my rights?
Should the work done by the insurance company be of good standard? should I put up with this soddy workmanship?.
We wish we did it ourselves, it would of been quicker and better quality. It is a national building company that is being used - perhaps that is why!!
When you have a proffessional in to do the work, you expect proffessional finish, seriously I am disabled and I can do better!!
Has anyone got any advice?

Thank you for your reply. I orginally videoed the work and damage, but after reading your post I have also taken photographs. I even took extra photo's, with spirit level on unit and door handles - which show how unlevel the handles are! ( unit is level), and also placed it on the floor, so show difference in level etc
I am also going to write a list of all extra work that needs to be put right due to damage caused by them ( with photo's), along with outstanding work, and work that needs to be re-done.
I will then email (and send hard copy) to insurance and go from there.
