When do Late deals become"late deals"?

Lookingg to get a deal in September quite flexible on dates from about 19th. When are deals likely to be had for this time.
Looking to go to Cyprus but the prices at the moment seem really high. I'm a Scot and our holidays are well over by then. Is it in an English holiday time?

    Thomas Cook late deals are up to the 30th september at the moment, but september hols do tend to hold their price pretty well because alot of people without kids have waited until the kids have gone back to school to go on holiday and because its still hot in europe, but as you get into october people think its starting to cool down weather wise so want to go away before it does.

    Been looking at AI but prices have been about 2k+ SC coming in about £700. Truth be told I'll pay what I have to pay but thought I'd hold off a bit to see if prices come down.
    I have also looked at Turkey/Portugal and elsewhere some are a bit cheaper but still far more than I expected.
    I might even book a flight and accommodation separately. I can fly from Edin Glas Newcst and Man.

    What would you as a travel agent reccomend?
