Seems a pretty good deal. To save you checking the destinations allowed are:
London-Stansted to:
UK: Belfast, Manchester, Glasgow
Germany: Berlin-Tegel, Düsseldorf, Hanover, Leipzig/Halle, Münster/Osnabrück, Nuremberg, Paderborn/Lippstadt
Austria: Vienna
Spain/Portugal: Palma de Mallorca.
Also many other destinations in Spain and Portugal via Palma de Mallorca: Alicante, Barcelona, Bilbao, Ibiza, Madrid, Malaga, Murcia, Seville, Santiago de Compostela, Valencia, Lisbon, Porto

I'm just a bit confused, I want to travel to Italy (Milan-Bergamo) from Manchester, as there are no direct flights available could I use two vouchers??? to travel to London Stansted and then from there to Milan Bergamo??0

I'm not an expert in this offer but I would have thought so. You buy two vouchers, use one to book the UK transfer and another one to book the Italy bit (and Two more vouchers if you want to come back).
Although I'm not sure of the availability of the offer ie. will you be able to find two flights that work together.0 -

One point worth noting is that you can get a refund on your vouchers if you can't find the right deal. It is also worth checking out airberlin's website as they have some pretty good deals - found some flights for one Euro (excl taxes) during half term next Feb! Just couldn't find any cheap hotels!0
