Hi
It is my boyfriend's birthday so I was looking for an easy birthday cake recipe does anyone have one? Just a traditional sponge birthday cake with cream and jam, and icing??? I don't know!!! We are both ill with cold so I know he won't really fancy anything so I wanted to make him a proper old fashioned cake as a surprise!
It is tomorrow but I have changed at last minute- until today my version of a birthday cake was two packets of betty crocker fudge brownies made up and put on top of one another with betty crocker frosting in the middle :rotfl:
But I don't think either of us would be up to that so I would just like an old fashioned light sponge birthday cake for him. Any recipes/links/suggestions of how to make his birthday good in general when we are both ill would be greatly appreciated! :T

ok - 8oz caster sugar, 8oz butter/marge (ideally stork), 8oz self raising flour, teaspoon baking powder, 4 eggs, mix together. Put into 2 lined cake tins, bake at gm 5ish for 20 mins or so. Turn out of tins immeditely and leave to cool on wire rack. Then fill/decorate as you like. Hope that helps!0

Here's the one I've used for years - a very basic Madeira sponge cake. Can be done in whatever tin shape you have available - I use it for for making fancy shaped cakes, as it's very easy to carve into different shapes.
The best bit is that it keeps well for about a week - so you could have a little bit every day while you're getting better!
This quantity will do a 6" square tin /7"round tin / 2lb loaf tin or even a 1ltr pudding bowl.
230g self raising flour
170g caster sugar
170g soft margerine/butter substitute
3 medium eggs
2tbsp milk
Method
Grease & line the tin or bowl. Pre-heat the oven to 150 C/ Gas 2.
Sift flour into a mixing bowl, add all the other ingredients.
Mix on a slow setting with an electric mixer, once all the ingredients are combined increase the speed and beat for one minute.
Spoon mixture into your tin/bowl and smooth the top.
Cook in the centre of the oven for 75-90 mins.
To test if it's ready - it should be a golden brown, when you lightly press the centre it should 'bounce' back, and if you insert a small skewer it should come out clean.
Once it's cooked, leave it in the tin/bowl for about 5 minutes before turning it out onto a cooling rack.
Variations: - you could add a little bit of lemon or orange zest, or substitute 50g of flour for 50g of coca powder.
Depending on what I'm making I will often cut the cake in half, spread a little melted apricot jam (it doesn't give a strong flavour but help to keep the cake moist) and some buttercream and sandwich it back together. I'll then do this all over the cake and cover with readyroll icing.
The 'bowl' shape can be easily turned into a piggy bank/elephant/dog/half a football etc.
The 'loaf tin' was turned into a hot-dog (for my teenage son!)/ sports car.
