If you have a reasonable budget as well as all the excellent ideas highlighted here (blu-tac is a must) then you could get her one of these:

Coming from a newly qualified teacher... definitely stickers for the little'uns and may I suggest a really unusual mug for the staff room? I'm in secondary so it may not be the case in primary (they seem less territorial of mugs), but I had two mugs nicked while I was training.
Also, those smelly/scratch and sniff markers are brill too! A very nice treat and the little'uns love to get to choose their favourite colour/smell as a treat.
Biccies and chocolate are a great idea. They can really make a big difference.
Maybe a good book or two for those rare moments of downtime.
Things from Lush for a nice bath to relax.
A good, upbeat CD to sing along to in the car drive home after work.

What about some self inking stamps. when I worked in primary the kids used to think it was a real treat if they got one of these on their hand.0
