Holiday suggestion please?

Hi
We are a couple (early 30's), no kids and really need a break away and been hunting online but so much choice and I am guessing lots of deals.
We are looking for lastminute deal ... leaving around or just after 29th August for 7 days.
4 or 5 star / all-inclusive
We want large / mega resort with lots of pools, options to eat etc and access to nice beach with plenty of water sports / snorkling etc. Ability to do some excusions on a couple of days, but also quite happy to stay at the resort.
Budget up to £1600 for two people.
Been looking at Egypt, Spain, Greece
Any suggestions ? :-)
