Do one-way flights fluctuate in price?

I need to book a one-way flight for myself and OH as we are moving back to Australia to live at the end of November.
I have been monitoring flight prices and so far the one-way price seems fairly stable at approx £600.
Question is - do one-way flights fluctuate in price the way that return airfares do? I know that Nov is getting close to Christmas and possibly a popular time to travel. We have some date flexibility, over about a week.
Obviously I want to get the best deal possible.
Any thoughts or advice much appreciated.
