Diet birthday cake recipie anyone?

Hi All,
Years ago I started a tradition of baking cakes and yummy puddings for my friends birthdays. The problem is that a very dear friends birthday is in a couple of weeks and he is on a diet. He is doing really, really well so I would love to bake him something a little lighter on the calories this year.
Do any of you have any tried and tested recipie ideas you wanna share?

What TYPE of eating plan is he on? If it is low calorie then I guess something like carrot cake could be suitably adjusted, or more refreshing - you could make lemon mousse or torte.0 -
i have a really nice recepie for a low fat brownie cake, it was in a chocolate cook book there is no margerine in these at all;
makes around 16.
3 1/2oz Plain flour
1/2 tsp baking powder
3 tbsp cocoa powder
7oz caster sugar
100ml plain low fat natural yogurt
2 eggs
1 tsp vanilla extract
1 1/2 tbsp vegetable oil.
oven at 180 / gas mark 4
20cm / 8" square tin
*sift flour, baking powder and cocoa in mixing bowl
*stir in caster sugar, beat in yogurt, eggs, vanilla extract and oil until combined
*spoon mix into tin and bake for around 25 mins
*cake is donw when firm to the touch, leave in the tin until cooled
*once cooled it can be cut into sections and removed
they are really nice, and i have added some chopped nuts before and thats been a winner too!

This isn't a recipe but something I've found very useful when wanting to find a lower calorie/fat recipe. You simply type in the ingredients you are using (including amounts) and how many portions it will make and it will give you the nutritional information.
As a new user I can't post links but if you google 'calorie count recipe analysis' it is the first link.

This is a lovely fat free fruit cake - in fact I have just put one in the oven
Irish Tea Cake (Brack Irish Tea Bread)
Ingredients
Dried sultanas or mixed cake fruit 500 g
Boiling water 400 ml
Teabags 2
Moist brown sugar (preferably muscovado) 200 g
Self raising flour 250 g
Egg 1
Mixed cake spice 1/2 tsp
Equipment
Put dried fruit in the mixing bowl with the brewed tea (minus teabags).
Leave to soak for a minimum of 2 h but preferably much longer, e.g. overnight or whilst out at work.
Turn on oven to warm up to 175°C.
Mix in the sugar, egg & spice.
Mix in the flour.
Line loaf tin with greaseproof paper.
Put mix in tin.
Bake about 1.5 h (it is ready when a skewer pushed into a cake does not come out with dough stuck on it).
Remove from tin & allow to cool.
It's lovely as it is, but can also be toasted and if your friend has a few spare calories / points a smidgeon of butter makes it delicious (but defeats the no fat advantages :rotfl:)0 -

Just use a granular sweetener in place of sugar in your usual cake recipe to cut the calories by 80%.
