If you are talking about android, then you can do pretty much everything you can imagine using the "tasker" app.
If you are talking about iOS then im afraid you are out of luck

I want an app to record a sequence of screen touches on my tablet so I can replay it at any time and automate a process.

What you're trying to do (and it's vague) sounds like a 'macro' - maybe try searching with that term.

You can do exactly what you want to do using tasker ..

    Use the Autoinput plugin ..

Tasker is not easy to use. My tablet is using android 4.4 not sure if that why. So far I managed to set a task up to Open the app. Canít get it to record anything after that. Or set the task up to run automatically. I need something more intuitive.

I have downloaded AutoInput but can’t get it to do anything. It may be what it’s designed for but I cannot find instructions and can not get it to work

Why not simply set the email app to manual overnight?

My email app doesn't allow you to specify a period where it isn't syncing, and doesn't play nicely with androids battery optimisation. Which means that it drains my battery all night long.

All I need is an automatic way of stopping it doing this but I have yet to find one. Even disabling the mobile and wifi data can't be done on a schedule, as far as I'm aware, on an unrooted phone.

Charge your phone overnight then it won't matter what email is doing.
