    I Love carrot cake, it's my second favourite cake (after coffee and walnut). There are 2 different types of carrot cake though: the healthy kind, with lots of nuts and seeds and fibre and a high carrot to sugar ratio. And then there's the delicious but unhealthy type, made with lots of brown sugar and butter and a thick layer of frosting.

    Thanks - I didn't know about the healthy type. I just got a slice of the standard frosted type with my meal deal.

    I like the cake (with sultanas) but not the topping, it makes my teeth go on edge because its too sweet.

    Mmmm, carrot cake.
    My favourite is the triple-layer Hummingbird one but I use less cinnamon than they recommend and don't like the frosting too sweet so leave out some of the sugar.

    I love carrot cake, but most of the ones you buy just taste of sugar. The homemade ones can't be beaten - moist, spicy cake and tangy, vanillary cream cheese topping. Delicious

    With that cream cheese frosting & all?
    Oh boy.


    Comes a close second to Red Velvet cake in my eyes.
    My better half makes BOTH and these are absolutely amazing in taste - so much so that fussy eater son will ask mum to make one.


    That said, in honesty the CoOp "Irresistable" ones of either variety at just over a few £'s are actually very good and IMHO better than any supermarket versions I have tried.
