I made a chilli sausage madras curry on Sunday (they always get better with age), so I will be having that tonight.
I know that it sounds a really strange dish, but it is tasty. I use the new Asda curry sauce which includes a spice package in the cap (75p at my local Asda). I add one large chunky chopped onion (which works really well with their dopiaza sauce), half a dozen hot green finger chillis, a sprinkling of onion and fenugreek seeds. I pre-grill the sausages, then cut each into four once nicely browned.
Before I made this, I never knew it was possible to sweat from the retinas
