I dunno, maybe a half is nut?
You'll have to sit and eat them all then weigh the shells and let us know

Why are they so much more than peanuts to buy?

None of it. A pistachio isn't a nut, it's a drupe.

Weigh them in shells. Shell them. Weigh the shells. Then weigh the nuts. Take the shells weight away from the whole weight. Add the shell weight to the nuts weight. Take away the shells weight from the nut's weight. Nut the shells and get a life...

Well, it's not a botanical nut, but it is a culinary nut...

Just like a peanut isn't a botanical nut, it's a legume, but is still a culinary nut

I love pistachios. Better bought with the shell on, always fresher.
