    Apple Meatloaf

    2 green apples 500g mince
    1 1/2 cups fresh breadcrumbs 1 onion, chopped
    salt & pepper 1/2 tsp mixed herbs
    1 tblsp worchester sauce 1 tblsp soy sauce
    2 eggs
    Sauce: 1/4 cup tomato sauce, 1/4 cup brown sugar

    Peel, core & grate apples. In bowl combine apples, mince & the other ingredients. Press mixture into loaf tin which has been slightly sprayed with oil. Spread tomato sauce across top of meatloaf, then sprinkle with sugar. Bake in moderate oven for 60 - 70 mins. Pour off any excess liquid.
    Don't worry about the world coming to an end today. It's already tomorrow in Australia. ;)

    Ginger Cake

    150ml milk
    1 egg
    3tbsp veg oil
    2tbsp golden syrup
    2tbsp black treacle
    100gm brown sugar
    pinch of salt
    1tsp vanilla extract
    2.5tsp ground ginger
    225gm plain flour
    1.5tsp baking powder
    1tsp baking soda

    1.Add the milk to the tin. LIghtly beat the egg and add to milk.
    2.Add syrup, oil, treacle, brown sugar, salt, vanilla and ground ginger.
    3.Add the flouron top of the wet ingredients.
    4.Finally, sprinkle the baking powder and soda on top of the flour.
    5.Place the tin back in themachine and set the program to 'cake' or 'quick'.
    6.If applicable set the crust colour to 'light'. Some models do not require a crust setting.
    7.Press strat.
    8.After 10 mins check that there is no flour left unmixed at the edges, if so scrape back into the mix with a spatula.
    9.When the progam has finished carefully remove the tin from the machine and run a plastic spatula around the edge of the loaf. Turn out onto wire rack and cool for 20-30minutes before slicing.

    NOTE:I never have treacle so use twice the amount of syrup instead. I also use white sugar in place of brown. Always turns out fine.

    Banana Nut Cake/Loaf in BM

    2 med or 3 small ripe bananas
    2tbsp oil
    3 eggs
    30ml milk
    120gm brown sugar
    1/2tsp salt
    100gm walnuts, chopped
    220gm plain white flour
    2tsp baking powder
    1/2tsp ground cinnamon

    1.Peel the bananas and mash in a bowl.
    2.Break the eggs into the bowl, add oil and mil, mix well.
    3.Add contents of bowl to BM tin and add sugar, salt and chopped nuts.
    4.Add flour, baking powder and ground cinnamon to tin.
    5.Place the tine back in the BM and set the program to 'cake' or 'quick'.
    6.If applicable set crust colour to 'light'.
    7.Press start.
    8.After 10 mins check that there is no flour left unmixed at the edges, if so scrape back into tin with a plastic spatula.

    Slow Cooker Paprika Pork
    (feeds 4 adults, 1 child)

    6-8 escalopes of Lean pork meat, cubed
    1 onion
    3 cloves garlic
    1 yellow or red pepper (all of them work ok)
    2 tbsp plain flour
    Pinch of mixed herbs
    ½tsp Paprika
    1tsp Smoked sweet Paprika (use 2tsp ordinary if you don’t have this)
    ½tsp Cinnamon
    Ground black pepper
    Pinch of salt
    Tin of chopped tomatoes
    Sweet Potato, cubed
    Tin of Borlotti Beans
    3 Carrots, chunked
    Sunflower or vegetable oil
    Stock

    Using a wok or large saucepan, heat the oil and add the onions. Fry until starting to brown, then reduce heat and caramelise slowly. Once transparent, add the crushed and chopped garlic, plus diced peppers and continue to cook slowly. Once soft, remove from pan and set aside.

    Get pan hot again and add cubed meat. Fry hard until browned, then reduce heat. There should be a little oil in the pan .. add more oil if necessary or a little water to get things steamy. Then sprinkle the flour over the meat, plus the two types of paprika, the cinnamon, the herbs and a good twist of black pepper. Fry gently, mixing all the time, until everything is combined and the flour is beginning to go gluey. Add a little stock and mix well, mobilising the flour and seasonings and adding more stock or water as the juices thicken. The ultimate aim is to have a gravy which is a fairly thick, soupy consistency.

    Add the onion/garlic mixture, plus the tomatoes, sweet potato, beans and carrots. Mix well in and when bubbling hot, transfer to the Slow Cooker. When ready to serve, taste and add the pinch of salt if necessary.

    I usually cook mine for some four hours on low .. but generally until the meat is tender.

    Serve with rice. If you prefer, you can add a spoonful of natural yoghurt at the end. If I can't get sweet potato, I use ordinary potatoes but add an apple, peeled cored and cubed. It disintegrates, but leaves its sweetness. :)

    BREAD MACHINE SPICED FRUIT LOAF

    Use whichever measure of quantity is right for your BM.

    Water (same as for a wholemeal loaf)
    Sunflower oil (same as for a wholemeal loaf)
    1 tsp runny honey
    1 tsp bread machine yeast granules (or whatever measure is usual for a loaf)
    1 measure of strong White flour
    1 measure of malted grain flour (Dove’s Farm)
    A handful of raisins or sultanas
    A handful of semi-dried apricots, quartered
    1 tsp mixed spice.

    Chuck it all in the BM bucket and set on a normal loaf programme.

    It doesn’t rise as much as an ordinary loaf would, and comes out with very much a malt loaf texture, but lighter than the housebricks that you can buy in the shops.

    Delicious with chocolate spread – super delicious with home made butter!!

    Just right for tea time on a cold winter’s day.

    Hi, I've used Judi's pizza base recipe and thought I'd share my sauce recipe for the tomato sauce. It's so much tastier than plain old puree or just tinned tomatoes.

    1 tin chopped tomatoes (with garlic if you like)
    1 big squeeze of tomato puree
    1 teaspoon of dried mixed Italian herbs (or basil and/or oregano)
    1 pinch of salt and black pepper.
    Water....as much as you need.

    Put all the ingredients except the water in a saucepan and heat gently for as long as it takes for it all to reduce, stir occasionally.

    When it has reduced add a bit of water and stir and leave on the heat for a while longer until it is at the right consistency for spreading.

    You can then use a hand blender to make a smooth sauce or leave it with some lumps for the rustic look.

    Big pie

    Saute a medium onion, add 500g mince, crushed garlic clove, tin of tomatoes, mushrooms and sweetcorn. Hard boil 3 eggs, chop and add to mix. Roll enough pastry to fill pie dish and fill with mix. Roll enough pastry to make a lid and glaze. Pop in oven at 200 c for about 20mins.

    Tastes amazing. Filling can also be used to top baked potato.

    recipe adapted from feb 2006 good food mag ( i added extra leek and substituted white rice in place of brown)

    1 tbsp olive oil
    4 chiken thighs skinned
    3 leeks sliced
    2 cloves garlic crushed
    400g tin chickpeas
    grated zest of 1 lemon
    200g easy cook rice
    450ml chicken stock
    broccoli florets

    Heat the oil in a large lidded frying pan fry chicken thighs until brown then remove them and gently fry leeks for a couple of minutes. Add in garlic chickpeas, zest of lemon and rice. Stir well to mix it all in. Pour over chicken stock put chicken thighs back in pan cover and simmer for 10 mins. Place broccoli florets on top of the mixture cover and continue to cook until thighs and broccoli are cooked through.
  • Easy Pasta Bolognese


    Med pack of mince (beef or lamb)
    Handful of value pasta
    Few mushrooms sliced
    Value jar of bolognese sauce
    Grated cheese



    Cook the pasta as on the packet in one pan, while thats cooking brown the mince in another and drain, add the sliced mushrooms and the sauce, when the pasta is cooked drain and add to the mince, mushrooms and sauce, stir and transfer to an ovenproof dish, put the grated cheese on the top and cook in an oven on 200 for about 30mins.

    INGREDIENTS

    Chicken Pieces (approx 2lbs)
    1 cup buttermilk
    1 cup flour
    1 teaspoon salt
    1 teaspoon pepper
    1 teaspoon paprika

    oil to fry chicken

    METHOD
    In a large dish place chicken and buttermilk, making sure that chicken is all coated. Leave this for no less than 30 minutes to marinate.

    In a plastic bag mix together the flour, salt, pepper and paprika. Shake well to combine.

    Heat oil to approx 190oc

    Lift chicken out of buttermilk and allow to drain.

    Place chicken in bag with flour and shake to ensure that they are well coated

    Place chicken in oil to brown or fryer

    Cook until golden and juices run clear when pierced

    Drain on kitchen roll and serve warm with chips and dips or coleslaw :)
